So this is one of the best cookies I’ve ever tasted, but assembling the cookies was complicated — aka not easy. I agree with a comment above that the whole blueberries made it very difficult to make the ‘base’ of the cookie. And working with dough that was chilled made it even more difficult. I ended up making thumb prints instead, which were good, but the couple I made beforehand (just like the recipe) were definitely better. I will try this again but I’m going to change it a bit, using the same ingredients. I just made these pumpkin muffins. They have a delicious taste but the texture is a bit firm and dense. I made sure not to over mix. Wonder if there was too much flour. I loved the addition of the coconut oil. I made these with butternut squash that I just baked I had added a little sugar to the squash when I scooped it out of the shell. Only added a small amount maybe 1/2 cup. The squash was sweet so needed only a little sugar. They are delicious. Between the layers I put a blue berry puree (from the berry and marscapone cake recipe).
